For brown sauce, use meat drippings from pork, beef or other roasted meats (scrape the bottom of the pan used to roast your pork or other meat).
Peel and dice onion.
In the meantime, heat dairy-free margarine in a saucepan.
Add onion and sauté them in hot fat.
Add flour, stirring occasionally until the flour turns brown.
Slowly stir in broth or water.
Season with salt and pepper.
Allow the sauce to simmer on low heat for about 20 minutes.
Before serving, strain through a fine sieve to remove onion fragments.
