Heat olive oil in a pan on low.
Add green peppers and onions to olive oil and cook until slightly tender (about 5-10 minutes).
Add bouillon (dissolved in water) and KetoCal 4:1 LQ unflavoured; blend together.
Add tomato paste; stir well.
Add spices: 0.5 g each of chili powder, cumin, paprika, and oregano (Note: This may be spicy for little ones so consider adding less and adjusting to taste).
Stir well over low heat until ingredients are well blended (do not overheat on higher temperatures or cook too long as this alters the texture).
Pour soup into a bowl and top with diced avocado and chopped cilantro.
