Ingredients

48 g cauliflower, measured raw
120 g KetoCal 4:1 LQ Unflavoured (about half of one drink box)
19 g olive oil
2 g chicken bouillon (Knorr®), dissolved in 15 g (1 Tbsp) of water
3 g cheddar cheese, shredded (Kraft®)
4 g green onions (scallions), chopped
4 g bacon, cooked crisp (divided)
Poultry seasoning and black pepper to taste

Instructions

Steam or boil the cauliflower until soft; blend using a hand mixer or food processor; add a small amount of water if needed.

Add KetoCal 4:1 unflavoured, olive oil,pureed cauliflower and bouillon (dissolved in water) to a pot on low heat.

Add half (2 g) of cooked bacon to soup mixture and save other half for garnish.

Add black pepper and poultry seasoning, if desired.

Let simmer for 10-15 minutes to allow to thicken slightly.

Just prior to serving, top with shredded cheese, chopped green onions and remaining 2 g of bacon.
